How We Brew Our Aki Geisha

Our go to filter recipe for Aki Geisha and what changes as the coffee ages to bring out its florals and balance.

Recently a lot of you have been picking up our filter beans especially the Aki Geisha and have been asking us about brew recipes. We wanted to share how we usually brew it at Prodigal.

If it is newly roasted you can absolutely still brew it. It will taste good and be very expressive. That said the best cup usually shows up after about two weeks of rest.

Our usual brew when it is fresh

When Aki Geisha is still young we like to push extraction and let the coffee fully open up.

Water temperature
97°C or as hot as you can get it
Off boil works great

Ratio
1:17

Grind size
Finer side of filter

Bloom
1 minute

Total brew time
We usually aim for around 4 minutes
Anything longer than that is totally fine

At this stage we do not hold back. We push heat time and extraction. Just brew the heck out of it. You should be getting a very floral and expressive cup.

As it rests

Once the coffee hits around 2 to 3 weeks off roast we start dialing things back naturally.

Lower temperature
Lower ratio
Shorter brew time
Slightly coarser grind

This is usually when the cup becomes more balanced and elegant.
