When most people hear Yunnan, they expect chocolate, nuts, something deeper and heavier.

This isn’t that.

This coffee is bright.
Structured.
Sparkling.

What Does It Taste Like?

Sparkling orange juice acidity.
Candied ginger sweetness.
A gentle bergamot lift at the finish.

It’s expressive, clean, and vibrant.

The controlled fermentation washed process gives it clarity and tension; the kind of cup that feels almost effervescent when brewed well.

It doesn’t sit heavy.
It dances.

Why Yunnan?

We’ve always believed Chinese coffees deserve more attention.

Yunnan is evolving quickly; better processing, tighter quality control, more intentional fermentation.

This lot from Lincang stood out because it felt deliberate.

Not experimental for the sake of it.
Not funky.
Not loud.

Just refined brightness with structure.

How We’re Brewing It

Filter roast, 200g.

Right now, we like it:

96–97°C
1:16 to 1:17 ratio
Medium-fine grind
Longer bloom

Let it stretch a little; the orange gets juicier as it opens up.
